Herbed Ricotta Zucchini Toast

Ingredients
  

2 medium zucchinis

1 cup fresh ricotta cheese

2 tablespoons fresh basil, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper to taste

4 slices of crusty bread (sourdough or ciabatta recommended)

2 tablespoons olive oil

Optional: Cherry tomatoes, halved for garnish

Prepare the Zucchini:

    - Cut the zucchinis into thin slices (about 1/4 inch thick). You can choose to slice them lengthwise for a more elegant presentation.

      Sauté the Zucchini:

        - In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the zucchini slices in a single layer and sprinkle with a pinch of salt. Sauté for about 2-3 minutes per side until they are golden brown and tender. Once cooked, transfer them to a paper towel to absorb excess oil.

          Make the Herbed Ricotta:

            - In a bowl, combine the ricotta cheese, chopped basil, parsley, chives, lemon juice, and lemon zest. Mix well until the herbs are evenly distributed throughout the ricotta. Season with salt and pepper to taste.

              Toast the Bread:
