1 cup cottage cheese (preferably low-fat)

1 cup rolled oats

½ cup almond flour

2 large eggs

½ cup honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup fresh or frozen blueberries

Optional: ¼ cup chopped nuts (walnuts or almonds) for added crunch

Optional: 1 tsp cinnamon for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Blend Ingredients: In a large mixing bowl, combine the cottage cheese, rolled oats, almond flour, eggs, honey (or maple syrup), and vanilla extract. Use a whisk or a hand mixer to blend until smooth and well combined.

      Add Dry Ingredients: Add the baking powder, baking soda, salt, and optional cinnamon into the mixture. Mix until everything is incorporated.

        Fold in Blueberries: Gently fold in the blueberries and, if using, the chopped nuts. Be careful not to over-mix to keep the blueberries intact.

          Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.

            Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
