Ingredients

8 oz elbow macaroni

2 cups frozen peas

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the frozen peas to the pot. Drain and set aside.

Make the Roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly to avoid burning.

Add Milk: Gradually pour in the milk, continuing to whisk to prevent lumps. Bring the mixture to a gentle simmer and cook for about 3-5 minutes, or until it begins to thicken.

Cheese It Up: Reduce the heat to low and stir in the sharp cheddar, mozzarella, and Parmesan cheeses. Mix until the cheese is fully melted and the sauce is smooth.

Flavor It: Add garlic powder, onion powder, paprika, salt, and pepper to the cheese sauce. Stir well to combine and taste for seasoning adjustments.

Combine: Fold the cooked macaroni and peas into the cheese sauce until well coated.

Optional Crunchy Top: If you'd like a crispy topping, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased baking dish. Sprinkle breadcrumbs on top and bake for 15-20 minutes until the top is golden brown and bubbly.

Serve: Garnish with fresh parsley if desired and serve hot. Enjoy your delightful creamy pea-infused macaroni and cheese!
