Homestyle Meatball and Marinara Sub Sandwiches

For the Meatballs:

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (preferably Italian-seasoned)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon dried basil

For the Marinara Sauce:

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1 teaspoon sugar (optional, to taste)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

For Assembly:

4 hoagie rolls or sub bread

1 cup shredded mozzarella cheese

Extra grated Parmesan cheese for topping

Instructions
 

Make the Meatballs:

    - In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, oregano, and basil. Mix until well combined.

      - Form the mixture into meatballs, about 1 1/2 inches in diameter.

        Cook the Meatballs:

          - Heat a skillet over medium heat with a drizzle of olive oil. Add the meatballs in batches, cooking until browned on all sides, about 6-8 minutes. Transfer to a plate.

            Prepare the Marinara Sauce:

              - In the same skillet, add the olive oil if needed and sauté the chopped onion until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

                - Pour in the crushed tomatoes, sprinkle in the sugar (if using), oregano, basil, and season with salt and pepper. Bring the sauce to a simmer, then reduce heat and let it cook for about 15 minutes.

                  Combine Meatballs with Sauce:

                    - Once the marinara is ready, add the cooked meatballs back into the skillet with the sauce. Let them simmer together for another 10-15 minutes, until the meatballs are heated through.

                      Toast the Hoagie Rolls:

                        - While the meatballs are simmering, preheat your oven to 350°F (175°C). Slice the hoagie rolls open and place them on a baking sheet. Toast in the oven for about 5-7 minutes, until lightly golden.

                          Assemble the Sandwiches:

                            - Remove the rolls from the oven. Spoon the meatballs and marinara sauce generously into each roll. Top with shredded mozzarella cheese and extra grated Parmesan if desired.

                              Melt the Cheese:

                                - Return the assembled sandwiches to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.

                                  Serve:

                                    - Remove from the oven, garnish with fresh basil leaves if desired, slice in half, and serve with extra marinara sauce on the side for dipping.
