Ingredients

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

4 hoagie rolls

1 cup shredded mozzarella cheese

Olive oil for frying

Additional fresh parsley for garnish

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Form the Meatballs: Using your hands, scoop out a portion of the mixture and roll it into a meatball about 1.5 inches in diameter. Repeat this process until all the mixture is used, yielding about 12-15 meatballs.

Cook the Meatballs: In a large skillet, heat a drizzle of olive oil over medium heat. Place the meatballs in the skillet, making sure not to overcrowd them. Cook for about 5-7 minutes, turning occasionally until they are browned on all sides. You may need to cook in batches.

Add Marinara Sauce: Once the meatballs are browned, gently pour the marinara sauce over them in the skillet. Lower the heat and let it simmer for about 15-20 minutes, allowing the meatballs to cook through and absorb the flavors of the sauce.

Prepare the Hoagie Rolls: While the meatballs are cooking, preheat your oven to 350°F (175°C). Slice the hoagie rolls lengthwise, ensuring you don’t cut all the way through. Place them on a baking sheet.

Assemble the Subs: Once the meatballs are cooked, spoon several meatballs along with the marinara sauce into each hoagie roll. Top generously with shredded mozzarella cheese.

Bake: Place the assembled subs in the preheated oven. Bake for about 10-12 minutes or until the cheese is melted and bubbly. For a crispy top, you can broil them for an additional 1-2 minutes, watching carefully to avoid burning.

Garnish and Serve: Remove from the oven, and sprinkle with additional fresh parsley before serving. Enjoy your comforting meatball subs with a side of chips or a fresh salad!
