3 cups cooked turkey, shredded or diced

1 cup turkey or chicken broth

1 cup cream of mushroom soup (or homemade equivalent)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon dried thyme

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package (6 ounces) stuffing mix

½ cup melted butter

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Base: In a large bowl, combine the shredded turkey, turkey or chicken broth, cream of mushroom soup, frozen vegetables, dried thyme, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well combined.

      Assemble the Casserole: Spread the turkey mixture evenly in a greased 9x13 inch casserole dish.

        Prepare Stuffing Topping: In a separate bowl, combine the stuffing mix with the melted butter and stir until all the mix is well coated. Spread the stuffing mixture evenly over the turkey layer in the casserole dish.

          Optional Cheese Layer: If using, sprinkle the shredded cheddar cheese evenly over the stuffing layer.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the stuffing is golden brown and the casserole is bubbly.

              Garnish and Serve: Remove from the oven and let sit for 5 minutes. Garnish with chopped fresh parsley before serving.
