For the filling:

1 lb ground turkey

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 cup diced potatoes (or 2 medium potatoes, peeled and diced)

1 cup corn kernels (fresh or frozen)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon Worcestershire sauce

Salt and pepper to taste

2 cups chicken broth

For the topping:

4 medium potatoes, peeled and chopped

½ cup milk

¼ cup unsalted butter

Salt and pepper to taste

½ cup shredded cheddar cheese (optional, for a cheesy topping)

Instructions
 

Prepare the Mashed Potato Topping:

    - In a large pot, boil water and add the chopped potatoes. Cook for about 15-20 minutes or until fork-tender.

      - Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth. Set aside.

        Cook the Filling:

          - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.

            - Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned.

              - Stir in the diced carrots, corn, and peas. Cook for an additional 5 minutes until the vegetables are slightly tender.

                - Add the diced potatoes, thyme, rosemary, Worcestershire sauce, salt, and pepper to the turkey mixture. Pour in the chicken broth and stir well. Allow to simmer for about 10 minutes until the mixture thickens slightly.

                  Assemble the Shepherd’s Pie:

                    - Preheat your oven to 400°F (200°C).

                      - In a greased baking dish (about 9x13 inches), evenly spread the turkey and vegetable filling.

                        - Layer the mashed potatoes over the filling, smoothing it out with a spatula. If desired, sprinkle shredded cheddar cheese on top.

                          Bake:

                            - Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbly.

                              Serve:
