For the filling:

1 pound ground turkey

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup green peas (fresh or frozen)

1 cup corn (fresh or frozen)

2 cups baby spinach, roughly chopped

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 cups chicken or vegetable broth

2 tablespoons all-purpose flour

For the mashed potato topping:

3 large russet potatoes, peeled and cubed

4 tablespoons unsalted butter

1/2 cup milk (or cream for extra richness)

Salt and pepper to taste

Optional: 1/4 cup grated cheddar cheese

Instructions
 

Prepare the mashed potatoes:

    - In a large pot, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

      - Add butter, milk, salt, and pepper to the hot potatoes. Mash until smooth and creamy. Stir in cheese if using. Set aside.

        Cook the turkey filling:

          - In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

            - Add minced garlic and cook for an additional minute until fragrant.

              - Increase the heat to medium-high and add the ground turkey. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

                Add vegetables:

                  - Stir in the diced carrots, peas, corn, and spinach. Cook for another 5 minutes until vegetables start to soften.

                    - Sprinkle flour over the mixture, stirring to combine. Slowly pour in the broth while stirring. Add Worcestershire sauce, thyme, rosemary, salt, and pepper.

                      - Bring the mixture to a simmer and reduce heat to medium-low. Let it cook for 5-10 minutes until bubbly and slightly thickened.

                        Assemble the Shepherd's Pie:

                          - Preheat your oven to 400°F (200°C).

                            - Transfer the turkey and vegetable mixture into a large baking dish. Spread the mashed potatoes evenly over the top, smoothing with a spatula.

                              Bake:

                                - Place the baking dish in the oven and bake for 25-30 minutes or until the top is golden brown and slightly crispy.

                                  Serve:
