Honey Garlic Chicken

1.5 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low-sodium recommended)

6 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar (or apple cider vinegar)

1 teaspoon cornstarch (optional, for thickening)

2 tablespoons water (if using cornstarch)

Salt and pepper to taste

2 tablespoons green onions, chopped (for garnish)

Optional: sesame seeds for garnish

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, and a pinch of salt and pepper. Set aside half of the marinade for later use.

    Marinate the Chicken: Place the chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Cook the Chicken: In a large skillet over medium-high heat, add a drizzle of oil. Remove the chicken from the marinade and place it in the skillet. Reserve the marinade for later use. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).

        Make the Sauce: Once the chicken is cooked, remove it from the skillet and set it aside on a plate. In the same skillet, pour in the reserved marinade and bring it to a simmer. If you’d like a thicker sauce, mix the cornstarch with the water to create a slurry, then add it to the skillet while stirring continuously. Allow the sauce to simmer for 2-3 minutes until thickened.

          Combine: Add the cooked chicken back into the skillet, tossing it in the sauce until well-coated. Let it cook for an additional minute to heat through.

            Serve: Plate the chicken and drizzle any remaining sauce from the skillet over the top. Garnish with chopped green onions and sesame seeds if desired. Serve alongside rice or steamed vegetables to enjoy the full delicious experience.
