3 tablespoons honey

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon vegetable oil

1 small red bell pepper, diced

1 small carrot, finely grated

3 green onions, sliced (whites and greens separated)

1 head of butter lettuce (or romaine), leaves separated and washed

Sesame seeds (for garnish)

Optional: chopped cilantro or mint for freshness

Prep the Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Set this mixture aside.

    Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the ground chicken to the skillet and cook, breaking it apart with a spatula for about 5-7 minutes or until it’s fully cooked and browned.

      Add Vegetables: Once the chicken is cooked, stir in the diced red bell pepper and grated carrot. Sauté for an additional 2-3 minutes until the vegetables start to soften.
