Honey Garlic Chicken Stir Fry

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch piece ginger, minced or grated

1 cup bell peppers (mixed colors), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

2 green onions, chopped

½ cup honey

¼ cup soy sauce (low sodium recommended)

2 tablespoons rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Sesame seeds for garnish

Instructions
 

Prepare the Sauce: In a bowl, mix together honey, soy sauce, rice vinegar, and sesame oil. Set aside.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant.

        Add Vegetables: Toss in the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes or until the vegetables are vibrant and tender-crisp.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet. Pour the honey-soy sauce mixture over the chicken and vegetables, stirring to combine. If you desire a thicker sauce, add the cornstarch mixture and cook for an additional 2-3 minutes, until it thickens.

            Garnish and Serve: Stir in the chopped green onions. Remove from heat, and garnish with sesame seeds. Serve hot over steamed rice or noodles.
