Ingredients
  

4 salmon fillets (6 oz each)

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper, to taste

1 zucchini, sliced into rounds

1 bell pepper, thinly sliced (any color)

1 cup cherry tomatoes, halved

Lemon wedges, for serving

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, grated ginger, olive oil, salt, and pepper until well combined.

      Prepare Foil: Cut four large pieces of aluminum foil, approximately 12 inches long. Lay them out on a flat surface.

        Assemble Packs: Place a salmon fillet in the center of each piece of foil. Drizzle each fillet generously with the honey marinade, making sure all edges are coated.

          Add Vegetables: Surround each salmon fillet with slices of zucchini, bell pepper, and cherry tomatoes. Season the vegetables lightly with salt and pepper, and drizzle a little extra olive oil if desired.

            Seal the Packs: Fold the sides of the foil over the salmon and vegetables, creating a neatly sealed packet. Ensure there are no air leaks for steam to escape.

              Bake: Place the foil packs on a baking sheet and transfer to the preheated oven. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

                Serve: Carefully open the foil packs (watch out for steam!) and transfer the salmon and veggies to plates. Garnish with fresh parsley, if using, and serve with lemon wedges on the side.
