Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons honey

2 tablespoons lime juice (freshly squeezed)

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

4 cups mixed greens (spinach, arugula, kale)

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup cilantro, chopped

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a medium bowl, whisk together the honey, lime juice, olive oil, garlic powder, cayenne pepper, salt, and pepper. Add the shrimp and toss until they are well coated. Let them marinate for at least 15 minutes.

Cook the Shrimp: Heat a non-stick skillet or grill pan over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes per side, or until they are pink and opaque. Remove from heat and set aside.

Prepare the Salad Base: In a large salad bowl, combine the mixed greens, diced avocado, cherry tomatoes, red onion, and chopped cilantro. Gently toss to mix all the ingredients together.

Combine and Serve: Once the shrimp are cooked, let them cool slightly before adding them to the salad. Toss everything gently to combine. Serve immediately with lime wedges on the side for an extra zesty kick.

Enjoy: This dish is best enjoyed fresh but can be refrigerated for up to an hour before serving if needed.
