4 bone-in, skin-on chicken thighs

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a medium bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, apple cider vinegar, smoked paprika, dried thyme, salt, and black pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat, about 400°F (200°C). Oil the grill grates to prevent sticking.
