Honey Roasted Chicken and Carrots

4 chicken thighs (bone-in, skin-on for extra flavor)

4 large carrots, peeled and sliced into 1-inch pieces

1/4 cup honey

1/4 cup soy sauce

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, whisk together honey, soy sauce, olive oil, minced garlic, thyme, rosemary, salt, and black pepper until well combined.

      Marinate the Chicken: Add the chicken thighs to the bowl, making sure they are well coated with the marinade. Allow them to marinate for at least 30 minutes at room temperature, or up to overnight in the refrigerator for deeper flavor.
