Hot Honey Chicken Biscuits

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

Salt and pepper to taste

Oil for frying

For the Hot Honey Sauce:

1/2 cup honey

1-2 teaspoons red pepper flakes (adjust to taste)

1 tablespoon apple cider vinegar

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted cold butter, cubed

3/4 cup milk

For Serving:

Fresh arugula (optional)

Pickles (optional)

Marinate the Chicken: In a bowl, combine chicken thighs and buttermilk. Cover and refrigerate for at least 30 minutes (or up to overnight) to tenderize.

    Prepare the Hot Honey Sauce: In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Heat over low, stirring until well blended. Set aside.

      Mix the Dry Ingredients: In a separate bowl, whisk together flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.

        Coat the Chicken: Remove chicken thighs from the buttermilk, letting excess drip off. Dredge each piece in the seasoned flour mixture, shaking off excess flour.

          Fry the Chicken: In a deep skillet or frying pan, heat oil to 350°F (175°C). Fry the chicken for 4-5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.

            Make the Biscuits: Preheat your oven to 425°F (220°C). In a large bowl, mix flour, baking powder, and salt. Cut in the cold butter until crumbly. Gradually stir in milk until a dough forms.

              Shape and Bake the Biscuits: Turn the dough onto a floured surface and knead gently until smooth. Roll out to about 1 inch thick and cut with a biscuit cutter or a glass. Place on a baking sheet and bake for 12-15 minutes, until golden brown.

                Assemble the Biscuits: Slice the warm biscuits in half. Place a piece of fried chicken on the bottom half, drizzle generously with hot honey sauce, and top with arugula and pickles if desired.
