Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

Oil for frying (vegetable or peanut oil works best)

For the Hot Honey Sauce:

1/2 cup honey

1-2 tsp red pepper flakes (adjust to taste)

1 tsp apple cider vinegar

1/2 tsp cayenne pepper (optional, for extra heat)

For the Bowls:

2 cups cooked jasmine or brown rice

1 cup steamed broccoli florets

1 cup shredded carrots

1 avocado, sliced

1/4 cup chopped green onions

Sesame seeds for garnish (optional)

Instructions

Marinate the Chicken:

    - In a large bowl, combine the buttermilk with a sprinkle of salt and pepper. Add the chicken thighs, ensuring they are completely submerged. Cover and refrigerate for at least 30 minutes (up to overnight for more flavor).

      Prepare the Hot Honey Sauce:

        - In a small saucepan over low heat, combine the honey, red pepper flakes, apple cider vinegar, and cayenne pepper. Stir gently until warmed through (about 2-3 minutes). Set aside to cool slightly.

          Prepare the Coating:

            - In a shallow dish, mix the flour, paprika, garlic powder, onion powder, cayenne pepper, and a pinch of salt and pepper.

              Fry the Chicken:

                - Heat about 1/2 inch of oil in a large skillet over medium-high heat.

                  - Remove the chicken from the marinade, allowing any excess liquid to drip off, and dredge each piece in the flour mixture, pressing to coat thoroughly.

                    - Fry the chicken in batches (don’t overcrowd the pan) for about 5-7 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

                      Assemble the Bowls:

                        - In each serving bowl, start with a base of rice. Top with steamed broccoli, shredded carrots, sliced avocado, and several pieces of crunchy Hot Honey Chicken.

                          - Drizzle the hot honey sauce generously over the chicken and vegetables, then sprinkle with chopped green onions and sesame seeds if desired.

                            Serve:

                              - Enjoy your Sweet & Spicy Hot Honey Chicken Bowls while hot. Provide extra hot honey on the side for those who like a bit more sweetness and heat!
