2 cups cooked chicken, shredded or chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup roasted red peppers, sliced

1/2 cup provolone cheese, cubed

1/4 cup black olives, sliced

1/2 cup pepperoncini, sliced

1/4 cup fresh basil, chopped

1/4 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

Fresh Italian bread or sub rolls for serving

Instructions
 

Prepare the Chicken: If you haven't already, cook and shred or chop your chicken. You can use grilled, roasted, or even rotisserie chicken for this recipe.

    Chop the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, roasted red peppers, sliced olives, and pepperoncini.
