Italian Sausage Stuffed Peppers

4 large bell peppers (any color you prefer)

1 pound Italian sausage (mild or spicy, your choice)

1 cup cooked rice (white or brown)

1 cup marinara sauce (plus extra for topping)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese (plus more for topping)

1 teaspoon dried Italian seasoning

1/2 teaspoon red pepper flakes (optional, for extra heat)

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C).

      Prepare the Peppers:

        Wash the bell peppers, cut the tops off, and remove the seeds and membranes. Lightly brush the outside and inside of each pepper with olive oil, and arrange them upright in a baking dish.

          Cook the Sausage:

            In a large skillet over medium heat, add the Italian sausage. Using a wooden spoon, break it apart and cook until browned, about 5-7 minutes. Drain excess grease if necessary.

              Sauté the Aromatics:

                Add the chopped onion and minced garlic to the skillet with the sausage. Sauté until the onion becomes translucent, about 3-4 minutes.

                  Combine Ingredients:

                    In a large mixing bowl, combine the cooked sausage mixture, cooked rice, marinara sauce, 1 cup of mozzarella cheese, Italian seasoning, red pepper flakes, salt, and pepper. Mix well until all ingredients are evenly incorporated.

                      Stuff the Peppers:

                        Carefully spoon the sausage mixture into each bell pepper, packing it tightly. Top each stuffed pepper with a spoonful of marinara sauce and a sprinkling of additional mozzarella cheese.

                          Bake the Peppers:

                            Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.

                              Garnish and Serve:

                                Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh basil or parsley before serving.
