Jalapeño Popper Potato Casserole

3 lbs russet potatoes, peeled and diced

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1 cup diced pickled jalapeños (adjust to your spice preference)

1/2 cup bacon bits (cooked until crispy)

1/2 cup green onions, sliced (plus more for garnish)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tbsp olive oil

1/4 cup grated Parmesan cheese (optional for topping)

Instructions
 

Preheat the Oven: Warm your oven to 375°F (190°C) and grease a 9x13 inch baking dish with cooking spray or a little olive oil.

    Prepare the Potatoes: In a large pot, boil the diced potatoes until tender, about 15-20 minutes. Drain and return them to the pot.

      Make the Creamy Mixture: Add softened cream cheese, sour cream, cheddar cheese, pepper jack cheese, diced jalapeños, bacon bits, green onions, garlic powder, onion powder, salt, and pepper to the cooked potatoes. Mix thoroughly until everything is well combined and the potatoes are lightly mashed but still chunky.

        Transfer to Baking Dish: Spoon the potato mixture into the prepared baking dish, spreading it evenly.

          Prepare the Topping: In a small bowl, combine breadcrumbs, olive oil, and grated Parmesan cheese (if using). Mix until the breadcrumbs are evenly coated.

            Add the Topping: Sprinkle the breadcrumb mixture evenly over the potato mixture in the baking dish.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and crispy.

                Garnish & Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with additional sliced green onions. Scoop and serve warm as a side dish, or enjoy it as a main course!
