Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon soy sauce (optional for added flavor)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Steak: Begin by patting the steak cubes dry with a paper towel. This will help achieve a nice sear. Season generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it shimmers but is not smoking.

Sear the Steak: Add the steak bites to the pan in a single layer, making sure not to overcrowd the pan. Sear them for about 2-3 minutes on each side, or until they are browned and cooked to your desired temperature. For medium-rare, aim for an internal temperature of 135°F (57°C).

Remove and Rest: Transfer the cooked steak bites to a plate and cover them loosely with aluminum foil to keep warm while you prepare the garlic butter sauce.

Make Garlic Butter Sauce: In the same skillet, reduce the heat to medium, add the butter, and allow it to melt. Once melted, add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned. Stir in the fresh rosemary, thyme, and soy sauce (if using) for an extra flavor punch.

Combine Steak and Sauce: Return the steak bites to the skillet and toss them in the garlic butter sauce, ensuring each bite is coated generously. Cook for another minute to reheat the steak and allow the flavors to meld together.

Serve: Remove from heat and transfer the steak bites to a serving platter. Garnish with freshly chopped parsley before serving.
