4 cups fresh broccoli florets

1 cup sharp cheddar cheese, shredded

1 cup heavy cream

2 cups chicken or vegetable broth (low-sodium)

1 small onion, diced

2 cloves garlic, minced

2 tablespoons olive oil or unsalted butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a bit of heat

Optional garnish: fresh chives or additional cheese

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then add the minced garlic and cook for an additional minute until fragrant.

    Add Broccoli and Broth: Stir in the broccoli florets and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 10-15 minutes, or until the broccoli is tender.

      Blend the Soup: Using an immersion blender, blend the soup until smooth. You can also transfer the mixture to a countertop blender, but be sure to let it cool slightly and blend in batches if necessary.
