Ingredients
  

4 whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup mixed vegetables (e.g., bell peppers, spinach, corn, and zucchini), finely chopped

1 teaspoon olive oil

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Optional: ½ cup salsa for dipping

Prep the Veggies: Rinse and chop the mixed vegetables into small, kid-friendly pieces.

    Sauté the Veggies: In a skillet, heat the olive oil over medium heat. Add the chopped mixed vegetables and sauté for about 5 minutes or until they’re tender. Season with garlic powder, onion powder, salt, and pepper, and stir well. Remove from heat and set aside.

      Mix Cheeses: In a bowl, combine the cheddar and mozzarella cheeses.

        Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread a generous layer of the cheese mixture evenly over half of the tortilla. Top with a layer of the sautéed vegetables and then sprinkle another layer of cheese on top. Fold the tortilla in half to cover the fillings.

          Cook the Quesadillas: Heat a non-stick skillet over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and the cheese starts to melt. Flip and cook for an additional 2-3 minutes on the other side. Repeat with the remaining tortillas.

            Slice and Serve: Once the quesadillas are golden and crispy, remove them from the skillet and let them cool for a minute. Cut them into wedges and serve warm with salsa on the side for dipping.
