1 lb (450g) smoked kielbasa, sliced into rounds

2 medium potatoes, diced (preferably Yukon Gold)

2 cups fresh broccoli florets

1 bell pepper (any color), sliced

1 red onion, cut into wedges

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Vegetables: In a large mixing bowl, combine the diced potatoes, broccoli florets, sliced bell pepper, and red onion.

      Season the Veggies: Drizzle the olive oil over the vegetables and sprinkle with minced garlic, smoked paprika, oregano, thyme, salt, and pepper. Toss everything together until the veggies are well coated with the oil and seasonings.
