Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef or ground pork

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon gochugaru (Korean red pepper flakes)

1/2 teaspoon black pepper

1 egg, beaten

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons Sriracha (adjust according to spice preference)

1 teaspoon rice vinegar

1 teaspoon soy sauce

1 teaspoon honey (optional, for sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Mix Meatball Ingredients: In a large mixing bowl, combine the ground meat, breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, gochugaru, black pepper, and beaten egg. Mix until well combined.

      Shape the Meatballs: Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and browned.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the dip. In a small bowl, whisk together the mayonnaise, Sriracha, rice vinegar, soy sauce, and honey until smooth. Adjust the heat by adding more Sriracha if desired.

            Serve: Once the meatballs are cooked, remove them from the oven and let them cool slightly. Transfer them to a serving platter, sprinkle with sesame seeds, and serve with the spicy mayo dip on the side.
