1 cup cooked chicken, shredded or diced

1 cup marinara sauce

2 cups shredded mozzarella cheese

1 teaspoon Italian seasoning

4 slices of sourdough bread (or your choice)

2 tablespoons butter, softened

1/4 cup grated Parmesan cheese

Fresh basil leaves (optional, for garnish)

Prepare the Chicken Mixture: In a bowl, combine the shredded or diced chicken with the marinara sauce and Italian seasoning. Mix well until the chicken is evenly coated.

    Buttery Bread: Spread a layer of softened butter on one side of each slice of sourdough bread. This will create a lovely golden crust when grilled.

      Assemble the Sandwich: Place two slices of bread, buttered side down, on a clean surface. Spread the chicken mixture evenly over the bread, then sprinkle half of the mozzarella cheese on top, followed by the remaining slices of bread, buttered side up.

        Heat a Skillet: In a large skillet over medium heat, carefully place the assembled sandwiches. Cook for about 4-5 minutes until the bottom slice is golden brown.

          Flip and Add Cheese: Once golden, carefully flip the sandwiches using a spatula. Before the second side cooks, sprinkle the remaining mozzarella cheese and the grated Parmesan cheese on top. Cover the skillet with a lid to help melt the cheese.
