Ingredients

1 lb chicken tenders

1 cup panko bread crumbs

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh chopped parsley, for garnish

Olive oil spray or 2 tablespoons olive oil

Instructions

Prep the Chicken:

    - Pat the chicken tenders dry with paper towels. This will help the coating adhere better.

      Make the Breading Stations:

        - In a shallow dish, combine the flour, salt, pepper, and oregano. In a second bowl, beat the eggs, then add minced garlic, lemon zest, and lemon juice, whisking until well combined. In a third bowl, mix together the panko breadcrumbs, Parmesan cheese, and red pepper flakes if using.

          Coat the Chicken:

            - Start by dredging each chicken tender in the flour mixture, ensuring it's fully coated. Shake off any excess flour.

              - Next, dip the tender into the egg mixture, allowing any excess to drip off.

                - Finally, coat the chicken in the breadcrumb and Parmesan mixture, pressing gently to make sure it sticks well. Set aside on a plate.

                  Preheat the Oven:

                    - Preheat your oven to 400°F (200°C). If you have a convection setting, this is ideal for achieving the perfect crispiness.

                      Arrange for Baking:

                        - Place the coated chicken tenders on a baking sheet lined with parchment paper. If desired, lightly spray the tops with olive oil spray or drizzle with a little olive oil to enhance browning.

                          Bake the Chicken:

                            - Bake in the preheated oven for 15-20 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). For extra crispiness, you can broil the tenders for an additional 2-3 minutes at the end.

                              Garnish and Serve:

                                - Once done, remove from the oven, let them cool for a couple of minutes, and garnish with freshly chopped parsley. Serve with a wedge of lemon on the side for an added zesty kick!
