Lemon Herb Roasted Chicken Thighs

4 bone-in, skin-on chicken thighs

Zest of 1 large lemon

3 tablespoons fresh lemon juice

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a medium bowl, combine the lemon zest, lemon juice, minced garlic, olive oil, thyme, rosemary, salt, and black pepper. Mix well to create a marinade.

      Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish. Let the chicken marinate in the refrigerator for at least 30 minutes, or preferably for 2 hours.

        Arrange for Roasting: Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken thighs, skin-side up, on a baking sheet lined with parchment paper or lightly greased.

          Roast the Chicken: Roast the chicken thighs in the preheated oven for 35-40 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches at least 165°F (74°C).

            Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for about 5 minutes. Transfer to a serving platter, garnish with chopped parsley, and serve with lemon wedges on the side.
