4 boneless, skinless chicken thighs

1/4 cup honey

Juice and zest of 2 lemons

2 garlic cloves, minced

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and black pepper to taste

Lemon slices, for garnish (optional)

Fresh thyme sprigs, for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, mix together the honey, lemon juice and zest, minced garlic, Dijon mustard, olive oil, thyme, salt, and black pepper. Add the chicken thighs to the bowl and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, preferably 2 hours for maximum flavor.

    Preheat the Grill or Oven: If using a grill, preheat it to medium-high heat (about 375°F or 190°C). If you're using an oven, preheat it to 400°F (200°C).

      Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for later. If we're grilling, place the chicken directly on the grill. Grill for about 7-8 minutes on each side or until the internal temperature reaches 165°F (75°C). If baking, place the chicken in a greased baking dish and bake for about 25-30 minutes, basting with leftover marinade halfway through.

        Prepare the Glaze: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer and cook for 5-7 minutes, or until it thickens slightly.

          Glaze the Chicken: Once the chicken is fully cooked, brush the glaze over the pieces generously. Allow them to sit for 5 minutes to soak in the flavor.

            Serve: Plate the chicken, drizzle any remaining glaze on top, and garnish with lemon slices and fresh thyme sprigs if desired. Serve with steamed vegetables or a side salad.
