Ingredients

1 cup orzo pasta

2 medium zucchini, diced

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 large lemon

1 cup vegetable broth (or chicken broth)

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Instructions

Cook the Orzo: In a medium-sized pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

Sauté the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and sauté for about 5-6 minutes or until they begin to soften. Stir occasionally to avoid burning.

Add Garlic: Once the zucchini is tender, add the minced garlic to the skillet and sauté for another minute until fragrant.

Combine Ingredients: Stir in the cooked orzo, vegetable broth, lemon zest, and lemon juice. Mix well and let it cook on medium heat for 2-3 minutes until heated through and the broth is mostly absorbed.

Add Tomatoes and Cheese: Gently fold in the halved cherry tomatoes. If you're using Parmesan cheese, add it now and mix until well incorporated. Season to taste with salt and pepper.

Plate and Garnish: Serve the orzo pasta warm, garnished with fresh basil leaves for an added touch of flavor and color.

Enjoy: Savor your refreshing Lemon Orzo with Zucchini as a delightful side dish or a light main course!
