1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

Juice and zest of 1 large lemon

4 cups mixed salad greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

Fresh parsley or cilantro, chopped (for garnish)

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Squeeze half of the lemon juice over it and add the zest. Toss until the shrimp are well-coated.
