2 medium zucchinis, spiralized

8 oz (225g) spaghetti or your choice of pasta

3 tbsp olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 lemon (zest and juice)

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

Toasted pine nuts for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Cherry Tomatoes: Toss in the halved cherry tomatoes and cook for about 3-4 minutes until they begin to soften. Stir occasionally to ensure even cooking.

        Incorporate Zucchini: Add the spiralized zucchini to the skillet. Sauté for 2-3 minutes or until just tender (but still a bit crunchy). Season with salt, pepper, and red pepper flakes if using.

          Combine with Pasta: Add the cooked spaghetti to the skillet, along with the reserved pasta water, lemon zest, and lemon juice. Toss everything together over medium heat until well combined, and heated through.

            Finish with Fresh Herbs and Cheese: Remove from heat, then fold in the chopped basil and grated Parmesan cheese if desired, stirring gently to mix everything thoroughly.

              Serve: Plate the pasta and garnish with toasted pine nuts, additional basil, and a sprinkle of Parmesan if you like. Serve immediately and enjoy the fresh flavors!
