Ingredients

1 bag (32 oz) frozen tater tots

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned, drained)

1/2 cup sliced jalapeños (pickled or fresh, depending on your heat preference)

1/2 cup sour cream

1/2 cup guacamole

1/4 cup chopped cilantro

1 packet taco seasoning

Salt and pepper to taste

Optional garnishes: sliced green onions, lime wedges

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Bake the Tater Tots: Spread the frozen tater tots evenly on the prepared baking sheet. Bake according to the package instructions, usually for about 25-30 minutes, until they are golden brown and crispy. Be sure to flip them halfway through for even cooking.

Prepare the Taco Seasoning: While the tater tots are baking, in a small bowl, mix the black beans with the taco seasoning. This will give the beans flavor and make them an integral part of the nacho experience.

Layer Your Nachos: Once the tater tots are crispy and done, remove them from the oven. Evenly sprinkle the seasoned black beans, diced tomatoes, jalapeños, and both types of shredded cheese over the top of the tater tots.

Melt the Cheese: Return the loaded tater tots to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. Keep an eye on them to avoid burning.

Garnish: Once the nacho tater tots are out of the oven, drizzle the sour cream over the top and add dollops of guacamole. Finish with fresh cilantro and any optional garnishes like sliced green onions or lime wedges.

Serve: Serve immediately while hot and cheesy! These loaded tater tots make a perfect snack or appetizer, so dig in and enjoy the explosion of flavors!
