Ingredients

4 whole wheat pita breads

1 cup marinara sauce (or pizza sauce)

2 cups shredded mozzarella cheese (or dairy-free cheese)

1 red bell pepper, diced

1 zucchini, thinly sliced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup baby spinach, chopped

1/2 cup black olives, sliced

1 teaspoon Italian seasoning (or pizza seasoning)

1/2 teaspoon garlic powder

Olive oil for drizzling

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Pita Base: Place the whole wheat pita breads on a baking sheet lined with parchment paper.

Spread the Sauce: Evenly spread about 1/4 cup of marinara sauce on each pita, leaving a little border around the edges.

Sprinkle Cheese: Add shredded mozzarella cheese on top of the sauce, about 1/2 cup per pita, ensuring an even layer.

Add Veggies: Layer on the diced red bell pepper, sliced zucchini, halved cherry tomatoes, red onion slices, chopped spinach, and black olives. Arrange the vegetables as desired for a colorful presentation.

Season the Pizzas: Sprinkle the Italian seasoning and garlic powder evenly over the veggie-loaded pitas. Add salt and pepper to taste.

Drizzle with Olive Oil: Lightly drizzle olive oil over the top of each loaded pita to enhance the flavors and promote browning.

Bake Them: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pita are lightly golden.

Serve: Remove the pita pizzas from the oven and let them cool for a minute. Garnish with fresh basil leaves before slicing.

Enjoy: Serve the Loaded Veggie Pita Pizzas warm, either as a delightful main course or fun appetizer.
