1 cup fresh pineapple chunks

1 cup coconut milk (full-fat for creaminess)

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut (for added texture)

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Pineapple: Begin by chopping fresh pineapple into small chunks. If using canned pineapple, ensure it's in juice, not syrup, and drain well.

    Blend the Base: In a blender, combine the pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

      Incorporate Shredded Coconut: Pour the blended mixture into a mixing bowl and stir in 1/2 cup of shredded coconut for a delightful texture.

        Fill the Molds: Carefully pour the mixture into popsicle molds, filling each mold about three-quarters full to allow for expansion. If desired, you can place a few extra pineapple chunks at the bottom or swirl some shredded coconut on top for extra flair.

          Insert Sticks: Place popsicle sticks into each mold and ensure they are centered.

            Freeze: Transfer the molds to the freezer and allow them to freeze for at least 6 hours or until completely solid.

              Unmold the Pops: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the popsicle sticks to release the pops.
