Ingredients

2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 ½ cups heavy whipping cream

1 tablespoon powdered sugar

1 teaspoon vanilla extract (for whipped cream)

1 ½ cups homemade or store-bought pound cake, cut into small cubes

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with granulated sugar and 1 teaspoon of vanilla extract. Toss the mixture gently and let it sit for about 15 minutes to macerate and release the juices.

Make the Whipped Cream: In a large mixing bowl, pour in the heavy whipping cream. Add the powdered sugar and 1 teaspoon of vanilla extract. Using a hand mixer or stand mixer with a whisk attachment, whip the cream on medium speed until soft peaks form (about 2-3 minutes). Do not overwhip!

Assemble the Cups: In clear dessert cups or small bowls, layer the ingredients. Start with a base of cubed pound cake, followed by a generous spoonful of the macerated strawberry mixture, then top with a dollop of whipped cream. Repeat the layers until the cups are full, finishing with whipped cream on top.

Garnish and Serve: If desired, garnish each cup with a fresh mint leaf for added color and flavor. Serve immediately, or chill for up to 30 minutes before serving to enhance the flavors.
