Mango Salsa Grilled Chicken

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Chicken: In a bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, cumin, lime juice, salt, and pepper. Add the chicken breasts, ensuring they're evenly coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for enhanced flavor).

    Prepare the Mango Salsa: In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Gently mix and let it sit for about 15-20 minutes to allow the flavors to meld.

      Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it on medium-high heat.
