Ingredients

For the Cornbread:

1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 cup canned pumpkin puree

½ cup maple syrup

½ cup milk (or a non-dairy substitute)

2 large eggs

¼ cup unsalted butter, melted

1 cup corn kernels (fresh, frozen, or canned)

For the Maple Glaze:

½ cup maple syrup

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line an 8-inch square baking dish with parchment paper for easy removal.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, baking powder, salt, cinnamon, and nutmeg thoroughly.

Combine Wet Ingredients: In a separate bowl, mix together the pumpkin puree, maple syrup, milk, eggs, and melted butter until well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; it’s okay if there are a few lumps. Gently fold in the corn kernels.

Bake the Cornbread: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Prepare Maple Glaze: While the cornbread is baking, prepare the maple glaze. In a small bowl, combine the maple syrup, melted butter, vanilla extract, and a pinch of salt. Whisk until smooth.

Glaze the Cornbread: Once the cornbread is done baking, remove it from the oven and drizzle the maple glaze over the top while it’s still warm. Use a spatula or the back of a spoon to spread the glaze evenly across the surface.

Cool and Serve: Allow the cornbread to cool in the baking dish for about 10 minutes. Then, transfer to a wire rack to cool completely before slicing. Serve warm or at room temperature, optionally garnished with extra maple syrup or a dollop of whipped cream.
