2 cups rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1/2 cup maple syrup (adjust to taste)

1/4 cup unsweetened applesauce

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp baking powder

1/2 tsp salt

1 cup chopped pecans (plus extra for topping)

Optional: 1/2 cup dried cranberries or raisins for added sweetness

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin or line it with muffin liners.

    Combine Wet Ingredients: In a medium mixing bowl, whisk together the almond milk, maple syrup, applesauce, eggs, and vanilla extract until well combined.

      Mix Dry Ingredients: In a separate large bowl, combine the rolled oats, cinnamon, baking powder, and salt. Stir in the chopped pecans, making sure they're evenly distributed throughout the dry ingredients.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until the oats are well coated and the mixture appears even. If you're adding dried cranberries or raisins, fold them in at this stage.

          Scoop Into Muffin Tin: Using a measuring cup or spoon, scoop equal portions of the mixture into the prepared muffin tin, filling each cup almost to the top. Press down lightly to compact them.
