Maple Roasted Beet & Goat Cheese Salad

Ingredients
  

4 medium-sized beets, scrubbed and tops trimmed

2 tablespoons olive oil

Salt and pepper to taste

3 cups mixed salad greens (arugula, spinach, and radicchio work well)

1 cup goat cheese, crumbled

1/2 cup walnuts, roughly chopped

1/4 cup dried cranberries

1/4 cup maple syrup

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 clove garlic, minced

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Roast Beets:

      - Wrap each beet individually in aluminum foil, drizzling a little olive oil and seasoning with salt and pepper.

        - Place the wrapped beets on a baking sheet and roast for 45-60 minutes, or until a fork easily pierces through them.

          - Once cooked, allow them to cool slightly. Peel the beets using gloves (to avoid staining) and slice them into wedges.

            Prepare Dressing:

              - In a small bowl, whisk together the maple syrup, balsamic vinegar, Dijon mustard, minced garlic, and a pinch of salt and pepper.

                - Gradually add 3 tablespoons of olive oil while whisking until the dressing is emulsified. Adjust seasoning if needed.

                  Toast Walnuts:

                    - In a dry skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently, until fragrant. Remove from heat and allow to cool.

                      Assemble Salad:

                        - In a large salad bowl, place the mixed greens.

                          - Add the roasted beet wedges, crumbled goat cheese, toasted walnuts, and dried cranberries.

                            Dress the Salad:

                              - Drizzle the maple dressing over the salad and toss gently to combine, ensuring all ingredients are well-coated.

                                Serve:
