1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon sugar

½ cup unsalted butter, chilled and diced

4-5 tablespoons ice water

For the Pear Filling:

4 medium ripe pears, peeled, cored, and sliced

¾ cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

1 tablespoon lemon juice

½ cup walnuts, coarsely chopped

For the Topping:

¼ cup rolled oats

¼ cup brown sugar

2 tablespoons unsalted butter, melted

Pinch of salt

Instructions
 

Make the Pie Crust:

    - In a large mixing bowl, whisk together the flour, salt, and sugar.

      - Add the chilled, diced butter and mix with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together.

          - Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Pear Filling:

              - In a large bowl, combine the sliced pears with lemon juice, maple syrup, vanilla extract, cinnamon, nutmeg, and chopped walnuts. Toss gently to coat. Set aside.

                Prepare the Topping:

                  - In a small bowl, mix the oats, brown sugar, melted butter, and a pinch of salt until well combined. Set aside.

                    Assemble the Pie:

                      - Preheat the oven to 375°F (190°C).

                        - On a floured surface, roll out the chilled pie crust to fit a 9-inch pie dish. Place the crust in the dish and trim any excess.

                          - Pour the pear filling into the prepared crust, spreading it evenly.

                            - Sprinkle the oat topping over the pear filling.

                              Bake the Pie:
