2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 garlic cloves, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup spinach, fresh

½ cup grated Parmesan cheese

12 oz fettuccine or your favorite pasta

Fresh basil leaves, for garnish

Crushed red pepper flakes, optional for heat

Instructions
 

Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from skillet and let rest.

    Sauté Aromatics: In the same skillet, reduce heat to medium-low and add the minced garlic and Italian seasoning. Sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.

      Make the Sauce: Add the halved cherry tomatoes to the skillet and cook for about 2 minutes until they start to soften. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

        Broth & Cheese: Once simmering, fold in the fresh spinach and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy. Season with additional salt and pepper if needed.

          Cook the Pasta: In a separate pot, cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving a little pasta water.

            Combine: Slice the chicken into strips and add it back to the sauce. If the sauce is too thick, gradually add some reserved pasta water to reach the desired consistency. Toss the cooked fettuccine into the sauce until well coated.

              Serve: Plate the Pasta and chicken, garnish with fresh basil leaves, and a sprinkle of crushed red pepper flakes for added heat if desired.
