1 cup couscous

1 1/4 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes, or until all the liquid is absorbed. Fluff with a fork and allow to cool.

    Prepare the Vegetables: While the couscous is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Set aside.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled couscous, chopped vegetables, olives, feta cheese, parsley, and mint.

          Dress the Salad: Pour the dressing over the salad and toss gently until everything is well coated and evenly mixed.

            Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
