1 cup all-purpose flour

1 tablespoon sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons unsalted butter, melted

1 medium apple, peeled, cored, and finely diced (preferably a tart variety like Granny Smith)

1 teaspoon vanilla extract

Maple syrup for serving

Powdered sugar for dusting (optional)

Whipped cream for serving (optional)

Instructions
 

Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

    Mix Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Combine Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay. Fold in the diced apples.

        Heat the Skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or a bit of melted butter.

          Cook the Pancakes: Using a tablespoon or a small ladle, pour small rounds of batter onto the skillet (about 2-3 inches in diameter). Cook until bubbles form on the surface, and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.

            Assemble the Sliders: Once all pancakes are cooked, stack two pancakes together for each slider. Drizzle some maple syrup between the layers or spread a thin layer of whipped cream if desired. Optionally, you can dust the top with powdered sugar for an extra touch.
