1 cup cooked chicken, shredded

1 cup BBQ sauce (your favorite brand or homemade)

1 cup cornmeal

1 cup buttermilk

2 large eggs

1/4 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup shredded cheddar cheese

1/4 cup chopped green onions (for garnish)

Olive oil or cooking spray (for greasing the muffin tin)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin with olive oil or cooking spray to prevent sticking.

    Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken and BBQ sauce. Mix well and set aside to let the flavors meld.

      Make the Cornbread Batter: In a large mixing bowl, whisk together the cornmeal, buttermilk, eggs, sugar, baking powder, baking soda, and salt until smooth. The batter will be slightly thick.

        Incorporate Cheddar Cheese: Fold in the shredded cheddar cheese into the cornbread batter until evenly distributed.

          Fill the Muffin Tin: Spoon about 1 tablespoon of cornbread batter into each muffin cup. Then, add about 1 tablespoon of the BBQ chicken mixture on top of the cornbread batter in each cup. Finally, add another tablespoon of cornbread batter to cover the chicken mixture.

            Bake: Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
