2 large flatbreads (whole wheat or regular)

2 cups cooked shredded chicken breast

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for brushing

Optional: sliced jalapeños for heat

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chicken Mixture: In a mixing bowl, combine the shredded chicken, BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Mix well until the chicken is evenly coated with the sauce.

      Prepare Flatbreads: Lay the flatbreads flat on a clean surface or baking sheet. Brush each side lightly with olive oil to enhance crispiness and flavor.

        Assemble the Stacks: Spread half of the BBQ chicken mixture evenly over one flatbread. Top with half of the sliced red onions and half of the mozzarella cheese. Place the second flatbread on top and repeat the layers with the remaining chicken mixture, onions, and cheese.

          Bake: Place the assembled flatbread stacks on a baking sheet and bake in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and the edges of the flatbreads are golden brown.

            Garnish: Remove the flatbread stacks from the oven and let them cool slightly. Sprinkle with chopped cilantro and add optional sliced jalapeños for extra heat if desired.

              Slice and Serve: Using a sharp knife or pizza cutter, slice the flatbread stacks into quarters or wedges. Serve warm as a delicious appetizer or meal option.
