1 cup polenta

4 cups chicken or vegetable broth

1 cup shredded Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon salt

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup red onion, finely diced

1/2 cup cilantro, chopped (for garnish)

Additional BBQ sauce for drizzling

Fresh cilantro leaves for garnish

Instructions
 

Prepare the Polenta:

    - In a medium saucepan, bring the chicken or vegetable broth to a boil over medium-high heat.

      - Slowly whisk in the polenta and reduce the heat to low. Stir consistently for about 5-7 minutes until the polenta thickens and pulls away from the sides of the pan.

        - Stir in the olive oil, garlic powder, salt, and Parmesan cheese until well combined.

          Set the Polenta:

            - Spread the polenta evenly onto a lined baking sheet and use a spatula to smooth it out into a flat layer about 1 inch thick.

              - Let it cool for about 20-30 minutes until set.

                Prepare the BBQ Chicken:

                  - In a medium mixing bowl, combine the shredded chicken with the BBQ sauce until the chicken is well-coated. For extra flavor, consider letting it marinate for 15 minutes.

                    Cut the Polenta:

                      - Once the polenta has set, use a cookie cutter or a knife to cut it into bite-sized squares or rounds, about 2 inches wide.

                        Cook the Polenta Bites:

                          - Preheat your oven to 425°F (220°C). Place the polenta bites on a lightly greased baking sheet.

                            - Bake for 15-20 minutes, or until the edges turn golden and crispy.
