6 small flour tortillas

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 medium bell pepper, diced (any color)

1/2 cup cooked and crumbled bacon (or sausage)

1/4 cup diced green onions

Salt and pepper to taste

1 tablespoon olive oil or cooking spray

Salsa, for serving (optional)

Instructions
 

Prep the Filling: In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the diced bell pepper, cooked bacon, and green onions.

    Cook the Egg Mixture: Heat a non-stick skillet over medium heat and add the olive oil or spray with cooking spray. Pour in the egg mixture. Cook for about 5-7 minutes, stirring occasionally, until the eggs are set but still soft. Remove from heat and stir in the shredded cheddar cheese until melted.

      Prepare the Tortillas: Warm the tortillas slightly in the microwave (about 20 seconds) to make them more pliable.

        Assemble the Burritos: Take one tortilla and spoon about 1-2 tablespoons of the egg filling into the center. Fold in the sides and roll it up tightly to create a mini burrito.

          Secure the Burrito Bites (optional): For extra security when serving, you may choose to pin each burrito with a toothpick.

            Heat and Serve: In the same skillet, lightly toast each mini burrito on all sides for about 2-3 minutes until golden brown and crispy.
