Mini Breakfast Pizza with Green Chili

1 package of refrigerated pizza dough or 1 pre-made mini pizza crust (e.g., English muffins, pita bread)

1/2 cup shredded mozzarella cheese

2 large eggs

1/4 cup cooked and crumbled breakfast sausage or crispy bacon (optional)

1-2 fresh green chilies, finely chopped (jalapeños or Anaheim)

1/4 cup diced bell pepper (any color)

1/4 cup chopped onion

Salt and pepper to taste

Olive oil or cooking spray

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat up.

    Prepare the Crust: If using pizza dough, roll it out on a lightly floured surface to your desired thickness for mini pizzas, and cut into small circles (about 4-6 inches in diameter). For pre-made crusts, simply arrange them on a baking sheet.

      Cook the Vegetables: In a skillet, heat a little olive oil over medium heat. Sauté the chopped onion and bell pepper for about 2-3 minutes until they soften. Add the chopped green chilies, season with salt and pepper, and cook for an additional 2 minutes. Remove from heat.

        Add Sausage/Bacon (Optional): If you are adding breakfast sausage or bacon, fold it into the vegetable mixture once it's cooked.

          Assemble the Mini Pizzas: Spread a sprinkle of mozzarella cheese over each mini crust. Spoon the vegetable (and sausage/bacon) mixture over the cheese.

            Add the Egg: Crack an egg directly onto each mini pizza. If you're worried about the eggs spilling over, you can make a small well in the toppings to help contain them. Season the egg with a bit of salt and pepper.

              Bake: Carefully transfer the mini pizzas to the hot oven (or pizza stone). Bake for 10-12 minutes or until the egg whites are set and the cheese is bubbling and golden.

                Garnish: Remove from the oven and let them cool for a minute. If desired, sprinkle fresh cilantro on top for garnish before serving.

                  Serve: Enjoy the mini breakfast pizzas warm, perhaps with a side of salsa or hot sauce for extra kick!
