Mini Cherry Cheesecake Bites

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup sour cream

1 cup cherry pie filling (or fresh cherries, pitted and chopped)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.

    Shape the crust in mini pans: Line a mini muffin tin with paper liners. Press about 1 tablespoon of the graham cracker mixture firmly into the bottom of each liner to form the crust. Use the back of a measuring spoon to compact it well.

      Make the cheesecake filling: In another mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue to beat until well incorporated. Mix in the vanilla extract and sour cream until the mixture is smooth.

        Assemble the cheesecake bites: Spoon about 1 tablespoon of the cream cheese mixture over the pressed graham cracker crusts in each muffin liner. Tap gently on the counter to settle the filling.

          Bake the bites: Preheat your oven to 325°F (160°C) and bake the mini cheesecakes for 15-18 minutes, or until set. They should not be jiggly in the center.

            Cool and refrigerate: Allow the mini cheesecakes to cool at room temperature for about 30 minutes. Then, refrigerate them for at least 2 hours, or until they are completely chilled and set.

              Top with cherries: Once chilled, add a scoop of cherry pie filling on top of each cheesecake bite. If using fresh cherries, chop them and sprinkle them on top instead.

                Garnish (optional): Add a mint leaf on top of each bite for a pop of color and freshness.

                  Serve and enjoy: Remove the mini cheesecakes from the muffin tin and serve chilled at your next gathering!
